Lion’s Mane Mushroom from Bankson Farms

Look what I found at the Farmers Market! It is a Lion’s Mane mushroom grown by Dan Owens of Bankson Lake Farm. While Dan has a farm in Lawton, these were grown in the basement of his home on Oakland Drive. The large one is a two pound beauty!

I’m told that it tastes like something in between shrimp and lobster. SO, I’m going to make mushroom soup with it. The soup will be available next Monday, June 24th for as long as it lasts. It will be priced depending on how much soup it makes.

Dan has more on the way and sells them at the Bank Street Market so you can do your own thing with these mushrooms..

I have started the soup. I’m keeping it simple - sautéed mushrooms, sautéed onions, chicken stock, salt and pepper and Sherry. I went to Tiffany’s and bought a bottle that wasn’t supermarket cooking sherry, but also didn’t force me to take a mortgage on the house.

We will see how it comes out. In any event, it will go on sale on Monday, 6/24 for as long as it lasts.

This another example of what a fabulous Farmers Market we have in Kalamazoo.
